Wines that pair best with summer
Although summer hasn’t truly arrived yet here in the north (and we can’t wait), we want to get ahead of it and share some recommendations for wines that pair best with the heat of the summer months. Ideal as an aperitif and great with seafood, fish, and light, typical summer dishes.
While it’s true that a good wine knows no season, in hot weather some wines can feel too alcoholic or tannic. That’s when we crave a fresher wine to help us cope with rising temperatures—such as any of these varieties: txakoli, verdejo, and albariño.
Txakoli
Txakoli is a young, fruity wine, slightly sparkling with a refreshing acidic touch, produced mostly in the Basque Country.

Slightly acidic and lightly carbonated on the palate

Verdejo
White wines made from the verdejo grape have intense fruity aromas reminiscent of citrus. They are wines with body and structure, with a characteristic hint of bitterness that gives them personality, always accompanied by pronounced fruit expression.
Our recommendation: José Pariente Verdejo
Bright straw yellow with greenish highlights.
Aromas of great intensity—elegant, fresh, and complex.
On the palate, fresh fruit notes return. Unctuous, luscious, and elegant with a gentle, pleasantly bitter finish.
Best served between 6 and 8°C.
Albariño
Made from Galicia’s native white grape and the main variety in the Rías Baixas DO, albariño is a very fresh, fruity, dry, and elegant wine. On the palate it’s fresh and smooth, with body, balanced alcohol, and a wide range of nuances.
Our recommendation: Albariño Pazo de Señorans

Smooth and rounded on the palate, with well-defined volume through the retronasal finish.
